Corn Salsa-
INGREDIENTS:
2 cups frozen corn kernels- thawed
1/3 cup chopped red onion
1/4 cup chopped red bell pepper
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 to 2 tablespoons finely chopped jalapeno pepper
2 teaspoons marjoram
1/2 teaspoon salt
DIRECTIONS :
1. Combine all ingredients in a small bowl.
2. Cover and refrigerate for 2 to 4 hours.
3. Remove from refrigerator about 30 minutes before serving. Makes about 3 cups corn salsa.
Guacamole-
INGREDIENTS:
1 large ripe Hass avocado, peeled & pitted
2 teaspoons fresh lime juice
2 Tbsp chopped fresh cilantro
1/4 cup finely chopped red onions
2 cloves garlic, finely minced
1 serrano chili, seeded,chopped
1/4 teaspoon salt
DIRECTIONS:
1. Mash up avocado with a fork or electric mixer.
2. Add lime juice.
3. Add all other ingredients and blend well.
For a very quick guac, simply take a 1/4 cup of salsa and mix it in with 2 ripe & mashed avocados.
Chipotle- honey Vinaigrette-
Mix a tablespoon of each, Tabasco Chipotle Sauce, lime juice, vinegar, oil, honey, salt, and freshly ground black pepper. Tastes like the the real thing. Make up more as you require.
Refried Beans -
INGREDIENTS:
1 lb. pinto beans
1/2 cup bacon drippings
1 teaspoon salt
6 cups lukewarm water
DIRECTIONS:
1. Pick over the beans and wash thoroughly in cold water, drain, add lukewarm water and salt, and cook gently in a deep pot for about 2 hours or until the beans are tender.
2. Stir frequently so that the beans cook very evenly throughout.
3. In a large skillet, heat the bacon drippings over medium high heat.
4. Drain the beans, reserving the liquid.
5. Add one large spoonful of cooked beans to the hot oil, and mash down.
6. Add a teaspoon of the reserved pot liquid and stir.
7. Repeat until all the beans are mashed. Add liquid as needed until the right thickness is obtained, stirring constantly.
