How do you make salsa using dried chiles?
I want to try making a salsa using dried Mexican chiles. I know to cover them with boiling water to soften them up . What else should I add before blending it up?
Depending on how much chiles you are using…add fresh crushed garlic garlic to blender with salt and dash of comino. Put softened chiles in blender with some of the water that they were boiled in and blend away. When it is well blended you must strain the salsa through a colander so you won’t get any skins in your salsa. Good Luck!

You wouldn’t want to use plastic for salsa that you plan to sell. The jars have to be hot-filled, and the plastic will melt.
Since you are planning to sell, you need a copy of the food preparation licensing and rules from your state licensing bureau anyway. It will explain the legal canning procedure. I am guessing it will have to be glass, using heat and pressure, like Grandma used to do.
