how do you repair tomato sauce when you have put too much sugar in it?
I have always put sugar in my salsa or tomato sauce to reduce the acidity of the tomatos. This time I put too much sugar so it is way too sweet. Does anyone know how to fix this without having to make a whole new batch?

The kind without all the pepper and onion chunks. The stuff that’s just pulped up tomatoes and some tiny hot seeds.

There are all kinds of salsas – fresh, cooked, canned; salsa, pico de gallo, mole – just like there are all kinds of Mexican restaurants, from the truly authentic to the horrendously stereotypical “Tex-Mex” which isn’t really Mexican at all.
The stuff that is “just pulped up tomatoes” isn’t “just pulped up tomatoes” – there are onions and peppers pureed in there. In such a case, this is likely a cooked salsa, meaning that the peppers, onions and ‘maters were diced up then heated up before chilling. Key to the flavor and quality of any salsa, of course, are the freshness of the vegetables and spices and herbs used. Cilantro, also called “Mexican parsley” is a typical spice for salsa, pico de gallo and moles. Cumin is also common, but you’d find that more in moles or cooked salsas.
The heat in hot peppers comes from the oil – oleoresin – in the seeds and ribs. To reduce the heat of any hot pepper, remove all the seeds and cut the whitish ribs away from the flesh of the pepper. The more seeds and rib you leave in, the hotter the end result will be. As always, when handling hot peppers, wear latex gloves or take pains not to touch the pepper directly. Certainly don’t rub your eyes! After handling, make sure you wash your hands thoroughly with plenty of soap and hot water: oleoresin can hang out on your fingers for a surprisingly long time! That’s the stuff “pepper spray” is made from.
For a basic cooked salsa, peel, seed and dice 2 medium, well-ripened tomatoes. Add to that one white or yellow onion, diced fine. Next, seed and devein 1 or 2 small, bright green jalapeno peppers. Combine your tomatoes, onion, jalapenos, seeds and a few sprigs of cilantro together in a food processor and puree until reduced. Transfer to a small sauce pan and simmer over low heat for 10 minutes until heated through. Then refrigerate and serve when cooled. You can also jazz it up with a little cumin, fresh lime juice or a shot of cayenne hot sauce as well. Really, you are limited only by your imagination and tastebuds!
